INTRODUCTION: “Tamales” (singular form is tamal) are a traditional Mexican dish made of masa (a dough made from “nixtamal” (maize or corn cooked in an alkaline solution (such as limewater), washed & hulled) that is filled with a variety of ingredients (meats, cheese, vegetables, fruits, etc.). The masa is spread onto “hojas” (dried corn husks), with some regions using banana leaves. Once the masa is spread it is filled with your choice of filling, wrapped (to form the tamal), then steamed until cooked. Tamales are often made at what some regions refer to as a “tamalada” which is a part of celebrations and holidays. During the tamalada, friends and family of all ages get together to make several dozens of tamales with even the young children participating with roles such as placing the hojas to soak, helping with patting them dry, and maintaining a stock of hojas ready to be used by those spreading the masa on the hojas. Tamales can be served with salsa or other condiments or side dishes. This versatile food, with countless regional variations and flavors, makes it one of Mexico’s favorite dishes.
During this tamalada we will be making Hatch, NM Red Chile & Pork Tamales (“Tamales de Chile Colorado Con Carne (de Cerdo)” (chile de Hatch, NM).
WHAT’S INCLUDED IN THIS CLASS?
- Making some tamales.
- Sharing a meal of tamales, Mexican rice, & beans (and a special treat for dessert) among all participants after class, with water, decaf or regular coffee.
- Take home kit with recipe (for 1 dozen tamales) that includes the following: Maseca®, Hatch, NM red chile pods, and corn husks.

WHAT DOES IT COST TO ATTEND THE CLASS?

HOW MANY PEOPLE CAN YOU ACCOMMODATE? We can accommodate up to 12 individuals. This class will require a minimum number of 10 sign-ups to proceed (additional details below at “What is your cancellation policy?”).
WHAT IS YOUR CANCELLATION POLICY? This class will require a minimum number of 10 sign-ups to proceed. Due to the nature, amount, and type of ingredients, along with substantial preparation work involved, we must ensure that we have enough participants to make the class viable. If we do not reach the minimum number of sign-ups by NOVEMBER 23, 2024, we must cancel the class. We encourage you to sign up soon to secure your spot! We appreciate your support and understanding.

IS THERE ANYTHING THAT I NEED TO BRING TO THE CLASS?
- We recommend you bring an apron and wear comfortable shoes. This is a hands-on class, during which you will be working with red chile sauce which is known to stain clothing and will be on your feet throughout the duration of the class.
ARE THERE ANY AGE RESTRICTIONS?
- Yes. This class is best suited for ages 15 years and older.

Expressing our sincere appreciation to all of you* who came out to learn and participate in the Tamales Cooking Class. A special shoutout to Betty de la Torre for making the beans & rice (Yummy!). We had a great time and met some beautiful, caring people who share our passion for helping and supporting others. By all accounts everyone enjoyed making the tamales and we were all able to sit together after the class for a delicious meal of tamales, beans & rice. A special treat of homemade biscochos were also on hand for dessert.
